For PvE, arguably the best dexterity katana option in Dark Souls 3 is the Onikiri and Ubadachi. The stuff in the middle tends to scale with both stats at once. Only the really heavy weapons have just str scaling and mostly light stuff like daggers (and some katanas/rapiers) have mainly Dex scaling. Most "medium" weapons like longswords scale like that. So having 30/30 str/dex you will do more damage than having just 60 str on said weapon for example. Some weapons have those letters on both Str adn Dex stat. This tells you how well the bonus damage of the weapon (the +X after base damage number) will scale with said stat. It has a high survivability factor because of its heavy armor, and shield bonus.
